The ingredients used in making Ekwang include cocoyams, cocoyam leaves, palm oil, crayfish, smoked fish and spices depending on preferences. I always add in some freshly blended garlic and ginger paste and some chopped onions.
Grated cocoyams wrapped in green leaves and cooked with meat, fish to perfection.
Ingredients
- 3-4 lb Large cocoyams (can be about 5-7 cocoyams)
- 4 Bunch Leafy greens (Cocoyam leaves, spinah, yu choy, collard greens, sweet bitterleaves.)
- 2 Cups Palm oil
- ½ kg Smoked Beef (can use fresh beef)
- ½ Cup Crayfish (ground)
